Super Green Smashed Falafel Wrap

Welcome to All Things Green episode 6. This is the viral smashed falafel wrap with an added green twist to it. This is loaded with green goodness, a perfectly seasoned falafel and a creamy tahini za’tar dressing. Let’s get into it!

This simple recipe requires:

  • 1 can chickpeas, drained and rinsed
  • 2 handfuls of spinach
  • 1/2 an onion, roughly chopped
  • 1 garlic clove
  • Handful of cilantro,
    • or culantro if you live in tropical climates.
  • Salt & pepper
  • Olive oil
  • Cumin
  • Vegetable toppings of your choice
    • I recommend using some of these:
      • lettuce
      • tomato slices
      • cucumber slices
      • avocado slices
      • olives
      • banana peppers
      • bell pepper slices
  • Tahini za’tar dressing

Here’s the process:

  • Drain the chickpeas
  • Roughly chop the onion, cilantro & garlic
  • Put the chickpeas, spinach, onion, garlic, cilantro, salt, pepper and olive oil into a food processor
  • Blend on high until you get a smooth and paste-y like texture
    • You don’t want it too wet that it won’t hold a shape
  • Bring a non-stick pan to medium heat
  • Cut the pita bread in half and spread a heaping spoonful of the falafel mix on the cut side of each piece
  • Once the pan is hot, toss the pita into the pan with the non-falafel side down for about 3 minutes
  • Flip it over and let the falafel side down cook for about 4-5 minutes.
    • The biggest thing is that you want the onion to cook through
  • While that’s cooking, prepare and slice up your toppings: see the list above for suggestions.
  • When the falafel starts to smell amazing, pull it off the pan and start building you wrap.
  • Go for got lettuce, tomato, cucumber, avocado and then douse it in tahini za’tar dressing. 

This my friends is so good and so healthy. Don’t be shy to overstuff these or make them for multiple meals in a row. This is a great example of a very well balanced low-calorie meal.

Ingredients

  • Green Falafel

  • 2 handfuls of loose leaf spinach

  • 1/2 an onion, roughly chopped

  • 1 garlic clove

  • Handful of cilantro, or culantro

  • Pinch salt & pepper

  • 1 tbs olive oil

  • 2 tbs cumin

  • Toppings
  • Romaine lettuce

  • Tomato slices

  • Cucumber slices

  • Avocado slices

  • Olives

  • 1/4 cup drippy tahini

  • Banana peppers

  • Bell pepper slices

  • Tahini Za’tar Dressing
  • 2 tbs lemon juice

  • 1 tbs Za’tar seasoning

Directions

  • Tahini Za’tar Dressing
  • In a small bowl, whisk together tahini, lemon juice, za’tar seasoning.
  • Top falafel wrap with tahini za’tar dressing
  • Enjoy!

Notes

  • The lemon juice will make the tahini dressing harden, so keep stirring the tahini dressing with the lemon juice until it becomes a creamy texture again.
  • You can add a little water if the tahini hardens too much.
